This easy quick bread is packed with fresh orange zest and shredded coconut. Thanks to yogurt, it is also extraordinarily moist. The glaze is optional — it is delicious glazed and unglazed. Serve at room temperature or toasted and buttered.
1 1/2 cups (195 grams) all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
1 cup (280 grams) vanilla yogurt, we used Yoplait Greek yogurt
1 cup (200 grams) sugar
3 large eggs
1 1/2 cups (140 grams) sweetened flaked coconut
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1/3 cup (80 ml) vegetable oil
1/2 cup (60 grams) powdered sugar
1 tablespoon orange juice
1 tablespoon sweetened flaked coconut
Adjust oven rack to middle position and heat oven to 350 degrees F. Spray a 9-inch-by-5-inch loaf pan with nonstick cooking spray or use butter.
Whisk flour, baking powder, cinnamon, and salt in a large bowl. Whisk yogurt, sugar, eggs, coconut, orange zest and vanilla in separate bowl.
Pour yogurt mixture into flour mixture. Stir until just mixed. Add vegetable oil and fold into the batter.
Pour the batter into prepared loaf pan and bake for 50 to 55 minutes or until a toothpick placed into the center of the loaf comes out clean. Cool loaf in pan for 15 minutes then transfer to a cooling rack and cool completely.
When the loaf has baked and cooled. Stir powdered sugar and orange juice together until smooth then drizzle over loaf. Scatter coconut on top. Wait about 10 minutes for the glaze to set then serve.
