Cucumber Slices with Smoked Salmon and Creme Fraiche

Want an elegant yet easy hors d’oeuvres?  Try Cucumber Slices with Smoked Salmon and Creme Fraiche.  I wanted something that people could easily walk around with, which these are.  They go quick and add a really nice refreshing and light option to a cocktail party. The creme fraiche by itself is decadent and creamy, but with the addition of lemon juice and lemon zest it gets lightened up just enough.  The same happens with the smoked salmon, which gets lightened up with the crisp cucumber base.

Cucumber Slices with Smoked Salmon and Creme Fraiche

1 seedless English / Hothouse Cucumber
3-4 ounces Smoked Salmon
4 ounces Creme Fraiche (about 1/2 the container)
1 teaspoon Lemon Zest
1 Tablespoon Lemon Juice
Salt and Pepper

Slice the cucumber on the bias into 1/2 inch slices, then set aside.  Next, add the lemon zest and juice to the creme fraiche, then season with salt and pepper.  Finally, to assemble, take one cucumber slice and add a small amount of smoked salmon, then top with a small dollop of the creme fraiche mixture, repeat for the remaining cucumber slices.

Thanks for the compliment :) They were very delicious. I didn’t want to take pictures of them at first because I wanted to eat them.
