Cucumber Slices with Smoked Salmon and Creme Fraiche Recipe

Want an elegant yet easy hors d’oeuvres?  Try Cucumber Slices with Smoked Salmon and Creme Fraiche.  I wanted something that people could easily walk around with, which these are.  They go quick and add a really nice refreshing and light option to a cocktail party. The creme fraiche by itself is decadent and creamy, but with the addition of lemon juice and lemon zest it gets lightened up just enough.  The same happens with the smoked salmon, which gets lightened up with the crisp cucumber base.

Ingredients
  • 1 seedless English / Hothouse Cucumber
  • 3-4 ounces Smoked Salmon
  • 4 ounces Creme Fraiche (about 1/2 the container)
  • 1 teaspoon Lemon Zest
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper
Method
  1. Slice the cucumber on the bias into 1/2 inch slices, then set aside.  Next, add the lemon zest and juice to the creme fraiche, then season with salt and pepper.  Finally, to assemble, take one cucumber slice and add a small amount of smoked salmon, then top with a small dollop of the creme fraiche mixture, repeat for the remaining cucumber slices.

Hi, looks like a great recipe and I’m going to try it for my xmas party. How many times would you multiply it for 25 guests to have one or two each?

PM – We recommend at least doubling the recipe. We are pretty sure 2 English/Seedless/Hot House cucumbers will do it for 25 guests, but you may want to add one more just in case, these are really easy to eat.
