Make Ahead and Freezer Friendly Baked Oatmeal
You can mix all of the ingredients for this baked oatmeal recipe the night before cooking and then bake in the morning. If you do this, place bananas on the bottom of the dish and not on top of the oats since they may brown slightly over night.
Some readers have tried freezing the oatmeal: After mixing everything together, tightly cover the oatmeal or pour into resealable plastic bags and freeze for up to one month. Then, when you want to bake the oatmeal, just remove from freezer, thaw and bake as directed. If you decide to do this, we suggest that you mix the fruit into the oatmeal instead of placing on top to prevent browning – especially the bananas.
Recipe Substitutions
This baked oatmeal recipe is easily adapted for dairy-free and egg-free diets. While we call for one egg in the recipe, we have had success removing the egg completely. Another easy substitution is replacing soy, almond or even coconut milk for the milk called for in the original recipe.
You can, of course, change the fruit and chocolate in the recipe, too. To reduce calories or level of sweetness, eliminate chocolate from the recipe all together. You could also substitute blueberries, blackberries or other fruit for the strawberries and banana.
Finally, if you wish to reduce the amount of sugar, readers have had success eliminating the sugar all together. You could do this or replace the sugar with honey or agave nectar.

What you need to know. There are lots of substitutions you can make, here. A few ideas: replace the milk with soy milk, remove the egg, reduce sugar a little, or change up the fruit, nuts and chocolate to something you love. We talk a bit more about recipe substitutions in the article, but you can also read below in the comments to see what others have done.
Equipment you’ll need. You will need a 10-1/2 by 7-inch or 8-inch by 8-inch baking dish, a baking sheet, a chef’s knife, 2 large bowls and a whisk.
- 2 cups (175 grams) old fashioned rolled oats
- 1/3 cup (70 grams) packed light brown sugar
- 1 teaspoon baking powder
- 1 tablespoon grated orange zest
- 1 teaspoon Chinese five spice (you can substitute cinnamon)
- 1/2 teaspoon salt
- 1/2 cup (55 grams) walnuts, chopped
- 1 cup (125 grams) sliced strawberries
- 1/3 cup (58 grams) semi-sweet chocolate chips
- 2 cups (473 ml) reduced-fat (2%) milk
- 1 large egg
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 ripe banana, peeled, 1/2-inch slices
- Heat oven to 375 degrees F (190 degrees C). Generously spray the inside of a 10-1/2 by 7 inch baking dish (or 8-inch by 8-inch square baking dish) with cooking spray and place on a baking sheet.
- In a large bowl, mix together the oats, sugar, baking powder, orange zest, Chinese five spice, salt, half the walnuts, half the strawberries and half the chocolate. Add to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top of the oats. Then, scatter the banana slices.
- In another large bowl, whisk together the milk, egg, butter and vanilla extract. Then, pour over oats and fruit. Gently shimmy and shake the baking dish to help the milk mixture go throughout the oats.

- Bake oatmeal for 35 to 40 minutes or until the top is golden brown and the milk mixture has set.
- For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar on top then place back in the oven under the broiler and broil for 20-30 seconds.

- Serve warm.

Hi Aimee — Yes, quick oats should work just fine. We just would not use the microwavable packets, while that would probably work, too, the texture would not be the same. The quick cooking oats (we buy Quaker Oats One Minute tub) would work great.

Hi Kelly, we have! The oatmeal keeps well for a couple days. The only thing we noticed was the the banana browns slightly over time. You could place the bananas on the bottom of the oatmeal instead of on top.

I hope Joanne doesn’t mind me replying to you… I’ve found Chinese Five Spice just in the regular spice rack at my grocery store. I debated on using it or just cinnamon when I made this recipe, but I’m glad I went with the Five Spice. It added an extra layer of flavor that I wasn’t expecting, but was SO good.

We thought the five spice made the oatmeal pretty special — plus, if someone were to purchase because of this recipe, there are lots of other uses. A favorite is to replace five spice with rosemary when we make these chicken drumsticks.

I also found the spice in the spice aisle of the grocery store. Only, be careful. The McCormick Spice looked right based on the list of spices on the bottle. There was another “Chinese Five Spice” that listed pepper. The McCormick one did not.
Making this right now, but just sent my hubbie out for szechuan pepper corns so I can make my own five spice!
I found myself out of strawberries by the time I went to make this so I used all of the ingredients, then added some peanut butter chips (went great with the bananas) and it was FABULOUS!!!!!! I plan to do this over and over again but will definately hide the strawberries next time so I can incorporate!

Yay! Something sweet but not too sweet for breakfast! I substituted half the strawberries for blackberries and it turned out very colorful and tasty. Also, frozen fruit works just fine if you’re looking for a cheaper out-of-season option. Thank you for the recipe!

Basically, after mixing everything together (before letting sit overnight) the oatmeal was covered tightly or poured into resealable plastic bags and frozen. Then, when you want to cook the oatmeal, just take it out of the freezer, thaw and bake as directed.
We do not see why it would not work for our recipe, we just suggest that the fruit is mixed into the oatmeal, not placed on top if you decide to freeze.

Can you make this without the brown sugar to make it a healthier option?
McKenzie, yes, you can remove the sugar, that should not affect the baking of the oatmeal, only the sweetness.

What is the consistency of this after it bakes?
Because we add the egg, the baked oatmeal is a bit firmer than regular oatmeal done on the stove-top. The oats, however, still have great texture.

I had to improvise ALOT because I wanted to make it and we didn’t have several of the ingredients on hand
So, I used blueberries instead of strawberries, didn’t use the brown sugar OR the chocolate chips (trying to make it healthier), and had to use mixed nuts. It was still pretty tasty, though I’m planning to do both types of berries and only use pecans or walnuts next time

I made this this morning and was highly disappointed. Apparently there are different Chinese 5 spices. Mine came out so pretty, just like it is pictured here on this post, but was so salty no one in our family could choke it down. Upon investigating my 5 spice ingredients more, my bottle says it contains garlic, onion, salt, etc. But my bottle clearly says Chinese 5 spice. So, I will have to throw out the entire dish because I don’t think I can salvage it. I learned something today, for sure!
Becca, we are so sorry to read that it didn’t work out! We are currently researching which brands include more than the 5 spices we would expect to be included in a bottle of Chinese 5 Spice. There should definitely not be onion or garlic powder included. Once we research some more, we will update the recipe to warn other readers of this.

would this be ok to prepare the night before and toss in the oven in the morning?
If using regular oats (not steel cut oats), we suggest you prepare the dry ingredients and wet ingredients separately. Then, just toss everything together in the baking dish in the morning.
If using steel cut oats, since they usually need an overnight soak anyway, you could put everything together the night before.
Also, don’t place the bananas on top, instead place them on the bottom since they will brown over time. OR, just add them in the morning.
Danielle – I make baked oatmeal all the time (thought not quite as gourmet as this – usually plain or with only blueberries) & I read somewhere a lady that made it ahead of time & then popped it in the oven the next day. I was surprised & gave it a try – have done this several times without any problems or altered affect. Give it a try! It works well.
Oh – and I make with Regular Oats (not steel cut)
My sister sent me this recipe. It inspired me to put together a little brunch party, just so I would have an excuse to make this dish. It was fantastic. One of the guest (who is not a fan of Oatmeal) asked if she could take the leftovers home!!!
In my version I used dark chocolate chips and instead of the Chinese 5-spice used Cinnamon and Nutmeg.

Hi! I am about to make this before my family and I go out of town for the weekend! I have a feeling it will be a great quick breakfast on Saturday morning!We are out of milk and my son is taking his nap. We plan to leave when he wakes up, could you use water instead of milk??
Water should work fine. The flavor will be slightly different and the oatmeal not as creamy, but you should be ok.

I made this today but made a few changes. I didn’t have the chinese 5 spice so I used a teaspoon of cinnamon and a teaspoon of cardamom. I also substituted almonds for the walnuts (what i had) and added a pint of blueberries. I was a little lazy and just stirred all of the fruit in and poured the liquid over that way. It was wonderful but if I add extra fruit next time, I will cut back on the milk a little bit.

Hi Lauren, Awesome idea! Yep, just mix everything (wet and dry ingredients) together then add to lightly greased or paper lined muffin cups. One thing to remember – Bake time might be slightly less, so we suggest checking half way through baking to see if they are done.

This is really amazing! I made it with unsweetened vanilla almond milk. I prepared all of the ingredients and mixed in pan the night before and popped in refrigerator, set the timer on my oven to start preheating 1/2 hr b4 I woke up and popped in 1st thing in the am. I had no issues with it being mushy and came together beautifully. I even doubled it to make a 9×13 pan. Also I did use old fashioned oats. Making again for our teacher appreciation brunch on Monday.
Wow! I made this and it is ah-mazing!! I switched pecans for the walnuts. I’m even thinking next time adding drained pineapple chunks and increasing the chocolate chips a bit. The added brown sugar on top and broiling for 3 minutes…divine! Drizzled a little bit of pancake syrup on my plate

Just made this. I substituted with vanilla soy milk, used dried cranberries instead of chocolate chips, and reduced brown sugar to a loose 1/4 cup. Oh, and used cinnamon instead of Chinese 5 spice. It was yummy. This is a keeper. Oh the possibilities!

Delicious, creamy texture to the oats. I used cinnamon in place of 5 spice, along with strawberries, blueberries, banana, and cherries. I subbed a mashed banana for the egg. Took mine closer to 50 min to bake in a convection oven. Yummy!

I used 5 grain porridge in place of plain rolled oats, pine nuts, pepitas and sunflower kernels in place of walnuts, cinnamon instead of 5 spice, and dried cranberries in place of choc chips. What size pan did you use?
Hi Sandra, We used a 10-1/2 by 7 inch baking dish, but a 9-inch square pan would work well. Also, readers have used a 13-inch by 9-inch pan and found that to work, too. (If you do use the 13×9 pan, watch the cooking time – it might take a little less cooking).
Delicious! I left out the 5-spice and added some Whey Protein powder, also used almond milk. It is so good!
Just wanted to let you know I made this for an office breakfast and it went like hotcakes. Also, I had a little bit left and took it to my 82 year old mother. She loved it!
I made this last weekend with Raspberries and Cinnamin and it was great. My husband and i had it go in no time. I think it would by good with a little warm milk in the bowl. Its not because it was dry, just sounds good…..Diffenatley a keeper…….

I just tried out this recipe, and it was a hit with my boyfriend! He loved that there was chocolate in it. I also used cinnamon, nutmeg, and ground cloves for the spices, included blueberries along with the strawberries and bananas, and used vanilla soy milk. My variation of this recipe came out great. I selected items that I typically have in my pantry, i.e. apples, raisins and lemon zest, reduced fat milk, 1/2 the sugar replaced by orange juice. It was served with natural apricot syrup and cream. Used only quality ingredients as it makes a difference in the outcome.

I guess you could also mix the wet and dry independantly the night before, leave bananas out, then quickly mix up in morning? I dunno, but I’m going to try it! Looks deelish. Oatmeal is one thing my kids eat nice and fast in the morning!

I just made this. I didn’t have strawberries, walnuts or Chinese spice so I used raspberries, almonds and cinnamon. This is sooooo good!
I am so excited to try this recipe this weekend. My hubby always makes oatmeal on Sunday mornings so it will be a treat for him if I make an extra special oatmeal for him. I’m not a fan of cooked banana’s and I happen to have apples on hand, so I’m going to vary the fruit and instead use apples, walnuts and cinnamon chips. So glad the weekend is here!
If I double the recipe and bake in a 9×13 pan, how long do you think it will take to bake?
Hi there — We suggest you check around 35 minutes–it will most likely need more time though. Probably another 10 to 15 minutes.
We really liked this a lot! I think next time I’ll omit the chocolate. I used 2 bananas vs. 1 and didn’t have an orange on hand to zest…follow recipe other than that. So good! Thanks.

This sounds great! I just started making oatmeal in the crockpot on Saturday night for Sunday morning. Would this work in a crock pot? The other was cooked on low for 8-9 hours.
It should — we have never tried it, but see no reason why it would not work.
Why do you add baking powder? I wouldn’t think oatmeal would especially need the rise. thanks!
Hi Kate – The baking powder makes the casserole light and not heavy. It will taste perfectly fine if you leave the baking powder out, though.
Goodness gracious. I made this last night so I wouldn’t have to get up early to bake it before my husband went to work. I think leaving it in the fridge overnight made the flavors pop even more. I used an 8×8 pan, cut it into four squares, and could barely finish one of those for breakfast. This is going on my “Tried and True” list.
So random…but how is the consistency? I’m looking for ideas for my sister’s shower this Sunday….and I like this one! But I’m wondering if it is something they could just put on their plates with the rest of their food, or if I would need to provide bowls. Someone mentioned cutting it into fours so it made me wonder. Thanks!
