It’s hard to believe, but you only need avocado for the creamy avocado sauce. No butter or cream, just avocado! I love how easy this is and the fact that I can make it in less than 15 minutes is a real bonus, especially during the week. We love this recipe so much that we’ve even made a version swapping sweet potato noodles for the pasta.

Quick and Easy Avocado Pasta Recipe

Just add avocado to a bowl and mash well with a fork.

A ripe avocado is ripe is best for this, otherwise there won’t be much flavor. An avocado is ripe when it gives slightly when squeezed. You can see our tips for buying, cutting and storing avocados here.

For flavor, we love fresh garlic, lemon juice, salt, and pepper. A Microplane helps with the garlic — If you don’t have one, mince the garlic finely. Use a fork to mash everything together. You can also use a food processor, but we hate cleaning it, so a fork is our go-to.

How to make vegan avocado pasta -- Mash avocado and then add water

To turn the avocado mash into a sauce, add a bit of hot pasta water. Then, to finish, throw in tomatoes, chopped green onion, and cooked pasta. After a good toss, the sauce should coat the pasta — if you need too, you can add a little more water to thin things out a bit.

Quick and Easy Avocado Pasta Recipe

Avocado pasta is fast, fresh, and simple. The longest part of this recipe is cooking the pasta. The avocado “sauce” is made in minutes. In the recipe, we call for grated garlic. To do this, we use a Microplane grater. If you do not have one at home, mince the garlic very finely before adding to the sauce. Choosing avocados can be a little tricky, for our tips, see our thoughts on how we choose and store avocados.

Makes 4 (1 cup) servings

You Will Need

8 ounces dry pasta

1 medium tomato, diced

1 green onion, finely sliced

1 large ripe avocado

1/4 teaspoon finely grated garlic

Juice from a quarter of a lemon

Salt and fresh ground pepper, to taste


    Bring a pot of salted water to the boil and cook pasta according to package directions. Once cooked, reserve 1/2 cup of hot pasta water then drain pasta.

    Mash avocado in a large bowl. Stir in the garlic and lemon juice then season with salt and pepper, to taste.

    Stir in a 1/4-cup of the reserved pasta water. Add pasta, tomatoes, and green onion then toss until the sauce coats the pasta. If the sauce is too thick, add a little more pasta water.

    I put way more garlic and lemon in this because I love garlic and lemon… also added some plain yogurt instead of water which a) make the sauce go further and b) added a nice tartness. Love this recipe, it’s a good one to get creative with (sometimes I’ll add some chilli flakes or nutritional yeast !)

    I love all the ingredients of this recipe, but all together with the mashed avocado didn’t taste right to me. I even added granulated garlic, more lemon and some cilantro. Dish just wasn’t that good was sorta blah.

    I made enough of this so I had two portions, one for tomorrow, had to stop myself from going back for seconds! This, is my new favourite go to dish… I also omitted the onion and used some chicken cooked in coconut oil, that needed using. This dish is actually perfect for me because I’m a singer, and it doesn’t give you that cloggy throat feeling that cream or butter does! Xxx

    Fast and fresh. Made with fresh pasta. Took about 15 minutes to make. My wife absolutely loved it. Loved the fact it was light and healthy. Most importantly I didn’t spend hours in the kitchen.

    I use this one a lot these days. My girlfriend loves avocados and this can be done up quick and easy. The latest time I mixed in sauteed mushrooms and veggies instead of tomatoes, still tastes great. Thanks!
