Some people like the cooler months.  We don’t.  Some people would say that when we write “cooler months” while living in Washington, DC, we don’t know what we are talking about and that we should see how our “cooler months” stand up to their “cooler months” in lets say, Buffalo, New York or Minnesota.  This is valid, however, I am still sitting here – avert eyes, this may be too much information – I am still sitting here wearing long underwear and while I am not 100% sure, Adam might be too.  Yeah … I know, move on.
In times like these, all we want to do is set up a little fire in our mini fireplace, get under one of our many blankets and indulge in some warming, soul-rejuvenating soup!
For example, in this situation, we may spring for a bowl of The Pioneer Woman’s Chicken Tortilla Soup packed with smokey cumin, shredded chicken and topped with all the toppings you can imagine – avocado, pico de gallo, sour cream, diced red onion and oh my goodness, cheese!  Are we losing you, it’s okay, go on over to the recipe, we understand.  {click here for The Pioneer Woman’s Chicken Tortilla Soup recipe}
Or maybe we would opt for Spicy Black Bean Soup from Carrie over at Deliciously Organic. Nourishing, warming and as Carrie says, the epitome of comfort, this soup would do quite well in one of our bowls in front of a fire, don’t you think? {click here for the recipe for Spicy Black Bean Soup on Deliciously Organic}
Or we of course could give some of our old favorites a try:
Pho: Vietnamese Noodle Soup {click here for the recipe}
Creamy Vegetable Soup {click here for the recipe}
Or, even Chicken Noodle Soup {click here for our tips for Chicken Noodle Soup}
For those of you in the “cooler months,” wherever you may be, stay warm!
Hope you are staying warm! I actually love the “cooler months” simply because the rest of the year is humidity and heat where I live 🙂 But I take anything of these soups any time of the year 🙂
Joey – we have been doing a fabulous job of staying warm 🙂 In the summer where we live, it can get pretty humid too … give us until then and we will probably be wanting cooler weather! I suppose the grass is always greener on the other side for us 🙂
Thank you for the Pho recipe-I have been looking for one. Soup is perfect for a cold day.
That Vietnamese Noodle Soup looks so good….love the photo!
I made a double batch of your creamy vegetable soup to fedex down to my dad. He will be over the moon when he gets it.
Wonderful!! Please send it with our thoughts too 🙂 Thanks, Wendi
