We’ve found a new favorite quick bread recipe. We’ve made this orange coconut bread twice in the last week and really cannot get enough. It’s been our breakfast, afternoon snack and even dessert. A whole cup of yogurt is added to make it extraordinarily moist.

How to Make Coconut Bread

This quick bread is simple to make. In fact, the batter is mixed and into the oven in no time — about 10 minutes.

How to Make Coconut Bread

The process is similar to making muffins. Mix together dry ingredients in a bowl then do the same with the wet ingredients. Combine them then pour into a loaf pan and bake. (By the way, since we add yogurt to the batter, the bread turns out to be incredibly moist).

Add yogurt

When the bread has baked and cooled, you have two options. Leave it plain or add a glaze. We love it both ways. If you do add the glaze, you’ll be happy to know it only requires two ingredients: powdered sugar and orange juice.

If you don’t glaze, we recommend toasting the bread slices then buttering. As the bread toasts, so does the coconut. It’s excellent.

Orange Coconut Bread Recipe

This easy quick bread is packed with fresh orange zest and shredded coconut. Thanks to yogurt, it is also extraordinarily moist. The glaze is optional — it is delicious glazed and unglazed. Serve at room temperature or toasted and buttered.

Makes 1 loaf or approximately 10 slices

You Will Need

Coconut Bread

1 1/2 cups (195 grams) all-purpose flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/4 teaspoon sea salt

1 cup (280 grams) vanilla yogurt, we used Yoplait Greek yogurt

1 cup (200 grams) sugar

3 large eggs

1 1/2 cups (140 grams) sweetened flaked coconut

1 tablespoon grated orange zest

1 teaspoon vanilla extract

1/3 cup (80 ml) vegetable oil

Optional Glaze

1/2 cup (60 grams) powdered sugar

1 tablespoon orange juice

1 tablespoon sweetened flaked coconut

Directions

  • Make Bread
  • 1Adjust oven rack to middle position and heat oven to 350 degrees F. Spray a 9-inch-by-5-inch loaf pan with nonstick cooking spray or use butter.

    2Whisk flour, baking powder, cinnamon, and salt in a large bowl. Whisk yogurt, sugar, eggs, coconut, orange zest and vanilla in separate bowl.

    3Pour yogurt mixture into flour mixture. Stir until just mixed. Add vegetable oil and fold into the batter.

    4Pour the batter into prepared loaf pan and bake for 50 to 55 minutes or until a toothpick placed into the center of the loaf comes out clean. Cool loaf in pan for 15 minutes then transfer to a cooling rack and cool completely.

  • Glaze Bread
  • 1When the loaf has baked and cooled. Stir powdered sugar and orange juice together until smooth then drizzle over loaf. Scatter coconut on top. Wait about 10 minutes for the glaze to set then serve.

Adam and Joanne's Tips

  • We used Yoplait Greek vanilla yogurt for this, but any vanilla yogurt will work nicely.
  • We have also used a 8 1/2-inch-by-4 1/2-inch loaf pan with success (in fact, since it is a little smaller, the batter domes nicely).

    Wow! This was so moist and beautiful. It wasn’t overly sweet and had a sweet fragrant to it. It definitely didn’t last long as my husband and 19 mo polished it. I’m making it again this weekend! Thank you.

    Joanne – I only buy/have 0% plain Greek yogurt What % are you using? Can I bump up the vanilla another way?

      Hi Rachel, plain 0% yogurt will work in the recipe just fine. You can add a splash more vanilla if you like, but I bet the bread will be just fine without it.

        If you want a powerful vanilla presence, just scrape some seeds from a vanilla bean pod and mix them in with the batter. Vanilla is one of my favorite flavors and I’ve done this with several recipes.

    Next time I will put parchment paper on the bottom of the pan because mine stuck and broke. But the bread is delicious!

    This bread looked so delicious online that I decided to make it today. It turned out pretty good. I am not a huge coconut fan (so maybe next time I’ll use a little less and more orange) but it tasted pretty good. Just a side note, in the list of ingredients baking powder is listed as an ingredient, but in the instructions it lists baking soda. I used baking powder and it turned out fine. Thanks for another great recipe!
